The easiest pancake you will ever make

I am the queen of pancakes and I can make it a hundred different ways!!! 😉 Pancakes to me are like a blank slate, just like noodles, ah that one is another days topic! I have many ways I make different types of pancakes but this one is the easiest way you will ever come across! Over the years I’ve gotten so used to making pancakes that I don’t even have a recipe for it! I just toss my ingredients in a mixing bowl and voila! Trust me, once you make it two to three times, you will get the hang of it! 😄

The trick is usually the addition of liquid and the flour. If you want a thinner batter like the French crepes, then you will need more liquid which is milk (although in the struggle version you can just add more water, please you didn’t hear it from me 🤫). Crepes are my favorite kind of pancakes because you can fill it with whatever filling you want, be it sweet or savory! You can even chop some vegetables and add to the batter and make it like a chunky pancake with sausages or shredded chicken! 😋

However, if you want the thick American style pancakes, the addition of liquid will be minimized here! This type of pancake is ‘cakey’ in texture and most times people have this with syrup, fresh fruit, whipped cream, and so on. It would be quite difficult to put a filling into this pancake and roll it up because it is thick and would break while you try to roll it.

That’s just a little info on pancakes but for today’s recipe we would be focusing on the French style pancakes known as crepes. I know it would be really nice to show exact measurements to help some of us, like how many cups of flour, sugar and so on but I really want to show you how my Aunt Omo taught me; without measuring cups, spoons and just eye balling your ingredients. It would really help you learn quickly. 👩‍🍳

Nevertheless, I’ll use the red party cup to try and show some measurements. Everyone may not have measuring cups in their kitchen and pancakes to me are not a reason to get measuring cups and spoons. It’s supposed to be something you can whip up any time in your home, school, friends house or any where that may not have the tools you have in your own kitchen. As long as there is a bowl, whisk and sieve for the flour, you can do this! 👩‍🍳

Also let’s not forget the pan. You would need a non- stick pan. In fact, among all my non stick pans, I have the one I use for only pancakes and make sure I keep it somewhere safe. If you don’t have a non- stick pan, you may be able to get away with a regular pan but you will have to grease it very well. Even at that it may be difficult when you want to flip it so just try to invest in a non-stick pan. Trust me, it’ll make your pancake endeavor an easy one.

The first time I made pancakes, I followed a recipe and the batter came out looking like a cookie dough! 😂 I still fried it thinking it would spread out in the pan but well it just came out looking like a fried chunky cookie! This was like 2004 or 2005. A while after, my lovely Aunty Omo came to stay with us and she taught me the easiest way ever!!! Without measuring cups or spoons and we didn’t even have a non- stick pan come to think of it! I wonder how she fried it without it sticking to the pan though! 🤔

Her method was to imagine I want to fry eggs. Crack my eggs into a bowl and beat it. From there you add the remaining ingredients.

Ingredients for Crepes

2 eggs

2 tablespoons sugar

Milk (1 red party cup)

Flour (1 red party cup and 2 tablespoons)

1 teaspoon of nutmeg

A pinch of salt

Butter or oil for frying

**NOTE: I love to add some lemon zest or orange zest to my batter whenever I’m filling my crepes with a sweet filling. This makes my crepe very flavorful and fragrant. You could even eat it alone without any filling. 😋

Ingredients for corned beef filling

Corned beef

Finely diced onions

Finely diced fresh pepper

Fresh chives or a nice fresh herb like dill. Nothing too strong like basil

1 tablespoon of brown sugar

1 tablespoon of veg oil

Directions

1. Crack your eggs into a bowl and whisk for a few seconds.

2. Add sugar and whisk for a minute. Add milk and whisk.

**NOTE: You can also add your sugar into the milk, mix together and add this to your egg.

3. Add in your flour. It would get lumpy as you begin to add, just keep whisking.

If your mix is too thick, you can thin it out with more milk. You can also fry just one and see how it turns out, if you feel its too thick, thin it out with more milk. Just in case you have a few lumps, there’s a cheat mode. You can always sieve the mixture so it really smooth. 😉

4. Lightly butter your non stick pan and begin to fry your pancakes.

5. For the corned beef filling, just saute the onions, pepper and corned beef for 2 minutes. Add the brown sugar and let it dissolve in your sauce. Finish with the chopped chives.

**NOTE: The brown sugar cuts the overly salty taste the corned beef has which is why there is no addition of salt in this sauce. If you don’t have brown sugar, you could use some honey. Honey has a very strong taste so make sure you use as little as a teaspoon first. Taste and see if you need to add more

6. Put a tablespoon of filling on our crepe and roll it nicely! Enjoy with your family and friends!
